S390
Böhler-Uddeholm's S390 Microclean steel is a decathlete in the PM steel world. An extreme performer with very fine carbide structure. Youtube shows it cutting through steel nails and brass tubes without taking any damage (if that's your thing). In the kitchen you can expect mad edge retention and a very good balance of hardness to toughness. The price: it's expensive and not stainless.
